Ingredients
1 cup rolled oats
1/2 cup almond flour
2 tablespoons matcha powder
1/2 cup creamy almond butter
1/4 cup maple syrup
1 teaspoon vanilla extract
Pinch of salt
Optional: shredded coconut or sesame seeds for coating
Directions
In a food processor, combine rolled oats, almond flour, and matcha powder. Pulse until the mixture forms a fine, uniform powder.
Add creamy almond butter, maple syrup, vanilla extract, and a pinch of salt to the dry mixture in the food processor.
Pulse the mixture until it comes together into a sticky dough. If the mixture seems too dry, you can add a tablespoon of water to help bind everything together.
Once the dough is formed, use a tablespoon to scoop out portions and roll them into small balls using your hands. If desired, roll the balls in shredded coconut or sesame seeds for an extra layer of flavor and texture
Place the matcha energy balls on a baking sheet lined with parchment paper and chill them in the refrigerator for at least 30 minutes to firm up.
Once chilled, transfer the energy balls to an airtight container for storage. They can be kept in the refrigerator for up to a week or stored in the freezer for longer shelf life.
Enjoy these Easy Vegan Matcha Energy Balls as a quick snack whenever you need a boost of energy on-the-go!
