Matcha Pancakes?! A Fun a Healthy Spin on a Classic Breakfast Dish

Pancakes: A yummy breakfast staple that remains a classic at just about every single breakfast diner out there, as well as enjoyed at homes all throughout the world during the morning time for a quick and delicious way to start the day. But what do traditional pancakes have to offer besides tasting good? Do they provide numerous health benefits, such as boosting energy and increasing focus? Do they lower cholesterol? Reduce inflammation? Or have ingredients that promote weight loss, anti-aging or detox chemicals from the body? Well, If they are matcha pancakes, they do!

Ingredients
- 3/4 cup gluten-free flour
- 1 tbsp coconut sugar
- 1 1/2 tsp matcha powder
- 1 tsp baking soda
- 1 tbsp nut butter
- 1 mashed banana
- 1/2 cup plant-based milk
Directions
- Prepare the batter: In a large bowl, whisk together your dry ingredients (flour, matcha powder, sweetener, baking powder, and salt) until well combined. In a separate bowl, mix wet ingredients (milk, eggs, oil, and vanilla). Pour wet ingredients into dry and stir gently until just combined. Don't overmix - let the batter rest for 5 minutes.
- Cook the pancakes: Heat a non-stick pan or griddle over medium-low heat and lightly grease. Pour ¼ cup of batter for each pancake. Cook for 2-3 minutes until bubbles form on surface and edges look set, then flip and cook for 1-2 minutes more until golden.
- Make chocolate syrup: While pancakes cook, whisk together cocoa powder and maple syrup in a small bowl. Gradually add warm water one tablespoon at a time until you reach desired consistency. Add a pinch of salt and vanilla extract.
- Serve: Stack the warm matcha pancakes and drizzle with the chocolate syrup. Serve immediately for the best texture and flavor.
Recipe Note
First, mix the banana, nut butter and milk together. Stir in the dry ingredients and whisk until combined and smooth. Let sit for 5 minutes. Butter the pan ( or use a small amount of coconut oil) you are using and make sure your heat setting is at low-medium heat ( you don’t want them to burn!) Spoon the batter onto the frying pan and wait until bubbles appear. Flip over and cook until both sides are golden brown. Plate them and enjoy with toppings of your choice! What You’ll Need:
- 1/4 cup melt dark chocolate,
- 1 tbsp coconut oil,
- 1/4 cup milk,
- 1 packet of Just Add Water
Mix ingredients in a bowl and add to a pot on low heat, stirring until smooth and ready, then pour over pancakes and enjoy! That’s it! :-)
