Ingredients
1 teaspoon cafe-grade matcha powder
60 ml hot water (not boiling, around 80°C)
150 ml eggnog (store-bought or homemade)
A pinch of cinnamon or nutmeg for the top
Optional (to lighten the eggnog): 50 ml milk or plant-based milk, or dairy-free milk
Optional: A slight drizzle of maple syrup or honey

120 ml milk
60 ml cream
A small pinch of cinnamon
A small pinch of nutmeg
A drop of vanilla extract

Whisk the egg yolk and sugar in a small saucepan until the mixture looks pale.
Add the milk, cream, cinnamon, nutmeg, and vanilla.
Warm over low heat, stirring continuously.
Once it thickens slightly and coats the back of a spoon, remove from heat.
Let it cool slightly before using.
