Ingredients

  • 1 teaspoon cafe-grade matcha powder
  • 60 ml hot water (not boiling, around 80°C)
  • 150 ml eggnog (store-bought or homemade)
  • A pinch of cinnamon or nutmeg for the top
  • Optional (to lighten the eggnog): 50 ml milk or plant-based milk, or dairy-free milk
  • Optional: A slight drizzle of maple syrup or honey
  • 1 egg yolk
  • 1 tablespoon sugar
  • 120 ml milk
  • 60 ml cream
  • A small pinch of cinnamon
  • A small pinch of nutmeg
  • A drop of vanilla extract

Directions

  1. Whisk the egg yolk and sugar in a small saucepan until the mixture looks pale.
  2. Add the milk, cream, cinnamon, nutmeg, and vanilla.
  3. Warm over low heat, stirring continuously.
  4. Once it thickens slightly and coats the back of a spoon, remove from heat.
  5. Let it cool slightly before using.
  6. Pour the eggnog into a small saucepan.
  7. Warm over low heat until it's just warm but not boiling.
  8. Stir occasionally to keep the texture smooth.
  9. Sift the matcha into your cup or bowl.
  10. Add the hot water and whisk until thoroughly blended and lightly frothy.
  11. Add the warm eggnog (homemade or store-bought) to your matcha base.
  12. Stir gently and taste.
  13. Add maple syrup or honey for more sweetness.
  14. Top your matcha eggnog with a small pinch of ground cinnamon or nutmeg dusting. You can also add a dollop of whipped cream if you want your matcha eggnog to be extra rich!
