Butterfly pea, also known as blue pea (clitoria ternatea), has been consumed for centuries as a caffeine-free tea, known for its calming properties and potential benefits for focus, cognitive function, and digestion. Its flavor is mild and floral, which makes it the perfect partner for the earthy notes of matcha powder. Ingredients

2 heaping tsp ceremonial grade matcha powder

1½ cups hot water (for whisking matcha powder, 80°C / 176°F)

1 tbsp dried butterfly pea flowers or 1 tsp butterfly pea powder

1 cup hot water (for steeping butterfly pea flower tea)

2 cups cold milk ( dairy or non-dairy milk)

Directions
Prepare the Blue Pea Layer
If using dried flowers: Place 1 tbsp dried butterfly pea flowers in a small saucepan. Pour 1 cup hot water over the flowers and steep for 5 minutes. Strain into a small pitcher and set aside to cool.
If using butterfly pea powder: Stir 1 tsp butterfly pea powder directly into 1 cup hot water until completely dissolved. Set aside to cool.
Prepare the Matcha
Sift 2 tsp ceremonial matcha powder into your matcha bowl with spout.
Pour in 1½ cups hot water (about 80°C).
Whisk using a chasen in a "W" oy "M" motion until frothy and fully dissolved.
Set aside briefly to cool slightly.
Assemble the Lattes
Fill each glass halfway with ice cubes.
Add about ¼ cup chilled butterfly pea or blue tea to each glass.
Pour in ½ cup cold milk over the blue layer.
Finally, pour in the whisked matcha layer slowly using your matcha bowl's spout to keep the layers distinct.
Optional: Add Sweetener
Add honey or maple syrup to taste, either in the milk step or directly into cups based on preference.
Quick Tips:
For best visual appeal, pour each layer slowly over the back of a spoon.
Serve the blue matcha tea immediately with a straw or spoon for stirring just before drinking.
