Watermelon Peppermint Iced Tea

In this recipe, watermelon joins peppermint to create an iced herbal tea that is crisp, cooling, and packed with fresh flavor. - 3 cups water
- 3 peppermint tea bags
- 2 cups seedless watermelon, cubed
- Juice of ½ to 1 lime (to taste)
- Ice, for serving
- Fresh mint leaves, for garnish
Directions
- Bring the water to a boil, then steep the peppermint tea bags for 5-7 minutes.
- Remove the tea bags and let the tea cool completely.
- Blend the watermelon until fully smooth.
- Pour the blended watermelon through a fine mesh sieve into a bowl or measuring jug, pressing gently with a spoon to extract the juice. Discard the pulp.
- In a pitcher, combine the strained watermelon juice, cooled peppermint tea, and lemon juice.
- Stir well and chill in the refrigerator until cold.
- Serve over ice and garnish with fresh mint leaves.
- Optional: Just before serving, pour in the cold sparkling water and stir gently to keep the bubbles intact.
